Ingredients
- 2 cups spicy quinoa
- 1 tbsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- 1 tomato diced or 10 cherry tomatoes halved
- 1/2 green bell pepper finely diced
- 1/2 orange or yellow bell pepper finely diced
- 1 tbsp cilantro chopped
