Roasted Vegetables with Balsamic Dressing

Ingredients

  • 1 red pepper sliced
  • 8 baby bella mushrooms quartered
  • 8 artichoke hearts marinated in oil (we buy ours from costco)
  • 10 asparagus pieces -Â  chopped in 2 inch segments
  • 1/4 cup balsamic vinaigrette dressing (click here to see recipe)
  • 1 tbsp extra virgin olive oil
  • sea salt and black pepper to taste

Directions

  1. Marinate all vegetables in balsamic dressing, olive oil. sea salt and black pepper for a few hours
  2. Roast in oven at 350 Fahrenheit for 10-15 min
