Ingredients
- 1/2 to 1 can of corn
- 1 can of kidney beans or black beans
- 1 green pepper, diced
- 1 red pepper, diced
- 1 tomato, diced
- 1/4 red onion, diced
- 6 sprigs of chopped cilantro
- juice of 1/2 to 1 lemon
- 2 tablespoons of chopped mint (optional)
- 4 tbsp extra virgin olive oil
- sea salt and black pepper to taste
- 1/2 teaspoon taco seasoning (we use the brand BlendItUp - no msg)
- 1/4 teaspoon red chili powder
Directions
- Combine lemon juice, olive oil, sea salt, black pepper, red chili powder, and taco seasoning in a small boil and whisk together
- Rinse the canned beans and corn well under cold water
- Combine the beans, corn, green bell pepper, red bell pepper, tomato, red onion, and cilantro in a medium to large sized bowl
- Add the lemon juice mixture and mix well
- You may serve immediately, although it generally tastes better when cold and marinated in fridge for 1-2 hours
