1 can of kidney beans, rinsed
1 bulb of fennel diced
12 cherry tomatoes quartered
4 tablespoons of finely minced red onion
2 cloves garlic pressed
4 tablespoons fresh lemon juice
4 tablespoons chopped walnuts
3 tablespoons chopped parsley
Olive Oil to taste
salt and pepper to taste
Chopped cilantro to garnish (optional)
Directions
Mix all above ingredients and chill in fridge
Salad tastes better the longer it marinates so prepare in advance of serving!
