Ingredients
- 2 cups cooked or 1- 15 oz can chickpeas, preferably organic
- 2 cloves garlic minced or pressed
- 1 medium tomato diced
- 1/4 medium red onion diced
- 2 tbsp parsley finely chopped
- 1 tbsp fresh lemon juice
- 3 tbsp extra virgin olive oil
- sea salt and pepper to taste
- Optional:
- 6 sliced kalamata olives

- Combine all ingredients in a large salad bowl
