Ingredients
- 1 tbsp coconut oil
- 2 medium onions
- 2 cloves garlic pressed
- 2 tsp ground coriander seed
- 2 tsp ground cumin
- 1/2 tsp ground red chili powder (cayenne pepper)
- 1 tsp ground turmeric
- 2 14 oz can chickpeas
- 8 tbsp chopped tomatoes
- 1 cup water
- 2 tsp paprika
- 1 tsp garam masala (optional)
- 1/2 tsp sea salt
- 1/2 fresh lemon squeezed
- 1/2 fresh hot green chili
- 2 tsp fresh grated ginger
- 5 sprigs cilantro chopped finely
Directions
- Heat oil in medium sized sauce pan
- Saute and lightly brown onion
- Add garlic and turn heat to medium
- Add coriander, cumin, red chili powder, and tumeric
- Add tomatoes – cook for 5 minutes with lid on
- Add chickpeas and water
- Add paprika, garam masala and salt and lemon juice
- Cook covered for 15 min
- Add green chili and ginger
- Cook for another 5 min with lid on
- Garnish with chopped cilantro
