Ingredients
- 2 beets peeled
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- sea salt to taste
- ground black pepper to taste
Directions
- Steam beets peeled for about 15 minutes or until they are tender enough to pierce with a fork
- Once steamed and cooled slice beets so that they are about 1/2 cm thick
- Combine all other ingredients in a bowl and then add beets
- Toss and serve
